Basic Biscuits

This is my favourite biscuit recipe and I use it for almost everything. It is adapted from a recipe my Gran taught me when I was little. I have no idea where the original recipe came from as it is so easy its just a recipe I kept in my head.

It makes for a really simple base and can be changed to suit many different occasions. I have some suggestions in the variations at the bottom, however with this one, once you’ve mastered the basic recipe, the world is you oyster.

 

Ingredients:

6oz   Plain Flour

4oz   Dairy Free butter substitute*

2oz   Caster Sugar

6/4/2. Now you can see why its so easy to remember!

*I like to use Stork – perfect for biscuits, cookies and pastry. It needs to be a solid consistency as soft margarine or sunflower spread wont work as well.

Preheat Oven to 200°C or 180°C for a fan oven

Method:

Place all the ingredients into a bowl together

Rub the fat into the flour and sugar till it resembles breadcrumbs

Keep going until the mixture starts to get sticky, then slowly work it into a ball of dough

Roll out on a well floured surface till its about 3-4mm thick

Cut out your desired shape and transfer onto a greased baking tray

Cook in the middle of the oven for 10-12mins until golden brown at the edges

Allow to cool before decorating however you like

 

Variations:

 

Empire Biscuits

simply use a round cutter to make the biscuits of even size, sandwich two together with raspberry jam. Then ice with white icing before putting the cherry on the top.

3D Dinosaur biscuits

This biscuit recipe is robust enough for use as a building biscuit. the specific moulds I used for these biscuits are available from Lakeland, but there are many others available on the market.

The trick with these is not to ice too closely to the joining areas as this makes them difficult to build. If your having trouble slotting them together you can always use a bit of icing as glue, to make them extra secure. I originally used these biscuits to decorate around my sons birthday cake, and they looked really effective.

Lemon Biscuits

For these, all you need to do is add the grated zest of 1 lemon to the basic biscuit recipe above. This gives a lovely, intense lemon flavour.

Christmas Biscuits

For these, you just need to add 1tsp of mixed spice to the basic biscuit recipe to give them a seasonal flavour, then go mad with whatever Christmas shapes you can get your hands on.
