Lemon Meringue Kisses

These are great little meringue shapes that are good either bagged up for a bake sale, or used for decoration/toppings on other deserts. My daughters favourite is having them on top of a generous scoop of sorbet.

Although the meringue recipe is quite easy, the piping a colouring can be a bit tricky so take your time. I recommend using icing sugar in this meringue recipe as it gives a very beautiful white finish.

Ingredients:

2 egg whites

4oz icing sugar

1 tsp lemon extract

Yellow food gel colouring

Method:

Pre-heat the oven to 120°C

Line a baking tray with greaseproof paper (baking parchment)

Whisk the egg whites until stiff

Add the icing sugar one spoonful at a time until the meringue is glossy and the bowl can be held upside down without it moving.

Whisk in the lemon extract

Take a piping bag and paint four fine lines of food gel down the inside of the bag. This can be very fiddly. I find it easier to place it over a glass to do this bit.

Once you have painted on the lines, fill the piping bag in the usual way with the meringue mixture.

Use a star nozzle to pipe the meringue into little kisses.

Bake in the oven for approximately 50mins, until the meringue is crisp.

Leave to cool on the tray for a few minutes before transferring to a cooling rack.

You can bag them up with decorative bows if you want to make them for a bake sale.

Or you can sprinkle them on top of your favourite dairy free ice-cream /sorbet for a great sundae.
