Salted Caramel Popcorn Cupcakes

As most of my followers will know, I started this blog when my daughter had been diagnosed with a dairy and soya allergy. Today however, she has grown up so much, she is going to be doing this post herself. I hope you all give her lots of encouragement as I couldn’t be prouder! Here you go Emma!

I am going to be teaching you how to make salted caramel popcorn cupcakes, perfect for a movie night party. The caramel is quite tricky in this recipe but, if I can do it, I’m sure you can too.

Ingredients:

For the cupcakes:

6 oz Dark brown Sugar

6 oz Dairy free margarine (we used vitalite)

3 Eggs

6 oz Self Raising Flour

1 tsp Vanilla Extract

1/2 tsp Salt

For the Buttercream

50g light brown sugar

1 tbsp dairy almond milk

1 1/2 oz of dairy free margarine (we used stork)

1/4 tsp vanilla extract

1/4 tsp salt

5 oz Icing Sugar

Popcorn for decoration

Method:

For the cupcakes:

  1. Firstly wash your hands
  2. Turn the oven on to 170 C
  3. Mix the butter and brown sugar till light and fluffy
  4. Then add the eggs one at a time, mixing with a small amount of the flour to stop it separating.
  5. Add the rest of the flour and mix until it is all combined.
  6. Add the vanilla extract and the salt and stir in well.
  7. Pop the mixture into cupcake cases to just over half full.
  8. Pop them in the oven for 15 mins before checking them. Ours needed another 3 mins. You know they are done when the bounce back and a skewer comes out clean.
  9. Then put them on a cooling rack, to cool.

For the buttercream:

  1. Firstly take 1/2 oz of the margarine, the brown sugar and almond milk and put into a pan.
  2. Heat the mixture till smooth and thickened. Don’t stop stirring during heating.
  3. This will take about 5mins to make a yummy caramel.
  4. Allow to cool completely before the next step.
  5. With the remaining margarine and Icing Sugar, make a buttercream and add the caramel in. Whisk until light and fluffy.

For Decoration:

  1. Print and cut out the cupcake wraps from the link at the bottom of this page, that look like popcorn holders.
  2. Pipe the buttercream using a flower nozzle on the top of your cupcake.
  3. Then put the cupcakes into the wraps
  4. Finally, sprinkle a few pieces of popcorn onto the top of each cupcake.
  5. Pick out a good movie and enjoy.
